Your old mail is only ever read. Nothing in your Microsoft or Google account is changed or deleted.
Where is your old mail now?
You'll be asked to grant access to your own mailbox. Only you can approve it, and you can revoke it at any time from your Microsoft account.
Most apps set this up for you if you just enter your email address and password. If yours asks for the details, or auto-setup picks the wrong account, enter them manually:

Choose IMAP, not POP3. IMAP keeps your mail on the server and in sync everywhere; POP3 downloads it onto one device and removes it from the server, so it won't be there on your phone or in webmail.
